A.N.Z.A.C Biscuits

Well, tomorrow is A.N.Z.A.C. day, the Australian & New Zealand equivalent of Memorial day. A.N.Z.A.C stands for Australian & New Zealand Army Corps and is in honor of those who have served and fallen for our respective countries.

A little tradition I'd like to share however is Anzac Biccies (Biccie = Short for Biscuit = What American's refer to as a Cookie).
Australian Women's Weekly posted a recipe for these delicious goodies, and while grocery shopping today I bought the ingredients so I can bake some tomorrow! In the meantime, check out the recipe!




ANZAC Biscuits

Serving size: Serves 10 or more
Cuisine type: Traditional
Cooking time: Less than 30 minutes


INGREDIENTS
1 cup (100g) rolled oats
½ cup (70g) white flour, sifted
½ cup (70g) wholemeal flour
½ cup (100g) brown sugar
¾ cup (75g) desiccated coconut
125g butter
4 tablespoons golden syrup (100% pure cane syrup in North America)
½ teaspoons bicarb of soda (Baking Soda)
1 tablespoon boiling water

METHOD
Preheat oven to 160°C (320°F). In a large mixing bowl combine rolled oats, flours, sugar and desiccated coconut. In a small saucepan melt butter and golden syrup.Combine bicarb and boiling water and stir into butter mixture. Stir liquid into dry ingredients until combined.Place spoonfuls of the mixture on a baking tray covered with baking paper. Bake for 15 minutes or until golden.
